CREAM OF POTATO SOUP 
3 potatoes, pared and sliced
1 onion, minced
2 cups chicken broth (canned or homemade)
1 1/2 cups water
1 (12 oz.) can evaporated milk
salt and white pepper, to taste
3 tbsp. minced chives (optional)

Combine potatoes, onion, broth and water in saucepan. Simmer, covered, for 35 minutes. Pour into blender. Cover; blend until smooth. Return to saucepan and heat to boiling. Stir in evaporated milk. Reduce heat and simmer, covered, for 4 to 5 minutes.

Sprinkle with salt and pepper; garnish with chives, if desired.

Makes 8 servings.
