CREAM OF POTATO WITH BROCCOLI
SOUP
 
3 lg. potatoes
2 stalks celery
3 green onions
2 tbsp. butter
1 c. chopped broccoli or cauliflower
2 tbsp. flour
1 c. milk
Salt and pepper to taste

1. Chop potatoes, celery and onions. Cover with water and cook until tender. Partially mash while still in water.

2. Add butter and broccoli. Cook 20 minutes.

3. Mix flour and milk, and add to above. Simmer until thickened - about 5 minutes. Add salt and pepper.

4. Serve with crackers or garlic bread.
