FRUIT COOKIES FOR DIABETICS 
1/3 c. salad oil
2 c. seedless raisins
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. baking soda
2 tsp. liquid sweetener
2 eggs, beaten
2 c. flour
1 tsp. baking powder
1/3 c. chopped nuts

Combine 1 cup water, oil, raisins, cinnamon and nutmeg in saucepan; boil for 3 minutes. let cool. Combine salt, soda, sweetener and 2 tablespoons water; stir until dissolved. Add to eggs. Stir into cooled mixture.

Add sifted flour and baking powder; mix well. Blend in nuts. Drop by teaspoons onto greased cookie sheet. Bake at 375 degrees until lightly brown. Makes 3 dozen cookies. Don't overcook.
