FRUIT COOKIES (Diabetic) 
1/3 c. salad oil
2 c. raisins
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. baking soda
2 tsp. liquid sweetener
2 eggs, beaten
2 c. flour
1 tsp. baking powder
1/2 c. nuts (optional)

Combine 1 cup water, oil, raisins, cinnamon and nutmeg in saucepan. Boil for 3 minutes (wait until it starts to boil then time). Cool.

Combine salt, soda, sweetener, 2 tbsp. water and stir well. Add to beaten eggs. Next stir into cooled mixture. Then add flour and baking powder. Mix in nuts. Drop by teaspoons on greased cookie sheet. Bake at 350 degrees until light brown. Makes 2 1/2 dozen.

I used monk fruit as the sweeter, and nuts. Great texture, and taste. The fruit I used was a mixed dried fruit, raisins, blue Barrie's, cherries, and cranberries. This was a real hit.
