DIABETIC SUGARLESS COOKIE 
1 c. raisins
1/2 c. apple, chopped (do not use Delicious)
1/2 c. dates, do not use sugar coated
1 c. water
1/2 c. shortening (Crisco)
2 eggs
4 or 5 drops liquid sweetener (Sweet & Low)
1 tsp. vanilla
Dash salt
1 tsp. baking soda

Boil raisins, dates and apple in 1 cup water 2 minutes. Do not drain.

Add shortening and cool. Then add beaten eggs, sweetener, vanilla, salt, soda, flour, oatmeal and nuts. Mix well and refrigerate several hours or until thoroughly chilled. Drop by teaspoons (do not make too big) on well greased cookie sheet. Bake 10 minutes at 350 degrees. Let cool and put in air tight container.

I use a plastic tray with lid or coffee cans. Put wax paper between layers and store in refrigerator or deep freeze.

Please realize that although this recipe has no refined sugar, which is a good thing, it does have a lot of carbs due to the dried fruit. Dates are especially high in carbs.
