RATATOUILLE MEXICANO MICROWAVE 
1 1/2 c. peeled, diced eggplant
1/2 c. thinly sliced onion
1 clove garlic, minced
3 tbsp. olive oil
1 med. green pepper, cut in 1/2 inch strips
1 1/2 c. sliced zucchini
16 oz. can Rotel tomatoes
1 tsp. salt
1/4 tsp. Italian seasoning or oregano

Place eggplant, onion, garlic, and oil in 2 quart casserole. Cook in microwave oven on full power for 5 minutes. Stir half way through cooking time. Layer peppers and zucchini over eggplant mixture. Add seasonings to tomatoes and pour over vegetables. Cook in microwave oven, covered, on full power for 8 to 10 minutes, until vegetables are tender. Let stand 5 minutes, covered, before servings. Rotel tomatoes are a brand that contain jalapenos. Serves 4 to 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
