RATATOUILLE ESPECIAL 
2 c. water
2 c. eggplant, diced
1 c. zucchini, diced
1/2 c. green bell pepper, chopped
1/2 c. onions, cut in chunks
1 1/2 c. cooked mushrooms, chopped
2 tbsp. vegetable broth seasoning
4 c. cooked brown rice

In large pot, combine water and remaining ingredients, except rice, and cook over medium heat for 30 minutes. Serve over hot cooked brown rice. Serves 4 to 6.
