1 lg. eggplant 3 sm. zucchini 1 green pepper 1/4 lb. mushrooms 1 lg. onion 1/4 tsp. salt 1/3 c. olive oil 1/4 tsp. garlic powder 1/8 tsp. pepper 1/4 tsp. Italian seasoning or oregano 2 (15 oz.) cans tomato sauce (Italian style) Cut vegetables in bite size cubes or slices. Put olive oil in bottom of large Dutch oven. Heat oil and add onions until slightly cooked under medium heat. Add the rest of the ingredients. Cook 30-45 minutes on simmer. Note: Add yellow squash, tomatoes, or other vegetables your family prefers. |
