EASY RATATOUILLE 
1/4 c. butter
2 med. onions, chopped
4 ribs celery, chopped
2 cloves garlic (or more if desired)
1 c. mushrooms

Saute until tender, about 3 to 4 minutes.

Add:

3 tomatoes, chopped
2 sm. zucchini, cut into 1/2 inch cubes
1 sm. eggplant, peeled and cubed
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper

Cook about 15 to 20 minutes or until tender. Serves 6-8 generously.
