6 med. onions, thinly sliced rings 6 tbsp. butter 1 tsp. sugar 1 tsp. salt A couple of dashes nutmeg 7 c. strong beef bouillon, about 12 cubes 1/4 - 1/3 c. sherry or port wine Seasoned croutons Mozzarella cheese Preheat oven to 375 degrees. Saute onion in melted butter until soft. Add sugar, salt and nutmeg. Toss well and cook, do not let onions get dark. In separate pot, boil 7 cups of water. Add cubes to water and dissolve completely. Add hot bouillon to onion mixture, bring to boil. Reduce heat and simmer 10 minutes. Skim oil off top, add sherry and adjust seasonings. Place in small cup and add croutons to completely cover top of bowl. Place sliced cheese on top of croutons. Bake until cheese is lightly brown and bubbly. |
