ELVA NORMAN'S BLACK WALNUT JIFFY
CAKE
 
Drop into electric mixer bowl in this order, these ingredients:

2 c. sugar
2 sticks butter (softened to room temperature)
2 c. all-purpose flour, sifted and measured (or 2 c. unsifted minus 2 tbsp.)
No baking powder
1/4 tsp. salt
1 tsp. vanilla extract
1 tsp. lemon extract
1 c. black walnuts (pieces or kernels) or 4 1/4 oz.
5 lg. or 6 med. size eggs

Beat above ingredients at high speed for 5 minutes. Pour into greased, floured tube pan. Bake at 350 degrees for 1 hour and 15 minutes. However, since oven temperatures may vary, test the cake with a toothpick after one hour. Remove from oven and if desired, dribble over the top the following lemon glaze.

LEMON GLAZE:

1 tsp. lemon extract or 2 tsp. lemon juice
1/3 c. hot water or 1/3 c. melted butter
4 c. confectioners sugar

Drizzle over the cake and sprinkle lightly nut pieces over the glaze.
