DUCKY'S BAKED CARAMEL POPCORN 
6 qts. popcorn, popped
2 sticks butter, melted
2 c. packed brown sugar
1/2 c. molasses or corn syrup
1 tsp. salt
1 tsp. vanilla
1 tsp. baking soda

Mix butter, brown sugar, molasses or corn syrup and salt and stir until it boils. Let boil 5 minutes, without stirring. Remove from heat. Add vanilla and baking soda. Pour mixture over popcorn (add peanuts, raisins and or coconut, if you wish) and mix well. Spread in shallow pans or cookie sheets. Bake at 250 degrees, stirring every 15 minutes. It's done after about 30 minutes. Remove and cool. Break apart.

Boil in large pan as mixture will rise to double in size when you add the baking soda.

This recipe tastes quite different if you use corn syrup and white sugar instead of molasses and brown sugar. Both are yummy.
