CHICKEN A LA FLORENTINE 
2 tbsp. butter
2 (10 oz.) pkg. frozen chopped spinach, thawed and thoroughly drained
2 c. diced cooked chicken
1 c. shredded Swiss cheese
Paprika
1/2 c. chopped onion
1 can cream of chicken soup
3 tbsp. chicken broth

In a glass container, combine butter with chopped onion. Cook in microwave 4 to 5 minutes, or until onion is tender. Stir onion into spinach. Spread mixture in a 9-inch pie plate. Spoon chicken evenly over spinach. Set aside.

Combine soup, cheese and broth in a 4-cup glass container. Cook in microwave 6 minutes. Stir to melt cheese. Pour evenly over chicken, sprinkle with paprika. Return to microwave and cook 15 to 17 minutes. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
