CAESAR PASTA SALAD 
8 oz. corkscrew pasta
1 c. sun-dried tomatoes, cut in halves
1 large cucumber, seeded and chopped
1/2 c. chopped purple onion
1 red pepper, chopped
1/2 c. shredded Parmesan cheese
pepper to taste
1 (8 oz.) bottle Caesar dressing

Cook pasta like directions; drain. Rinse in cold water and drain again. Immerse sun-dried tomatoes in boiling water; let stand 10 minutes or until softened. Drain well. Combine pasta, tomato halves, cucumber, bell pepper, cheese and pepper. Add desired amount of dressing, tossing to coat. Cover and chill 2 hours before serving.

Yield: 6 to 8 servings.

Sun-dried tomatoes lend a chewy texture and intense tomato flavor.

Absolutely fantastic! Do not cut the dressing recipe - as the pasta absorbs the dressing: Her dressing tastes like a light version of Blue Cheese Dressing... Yummm!

Her dressing calls for:
1 cup mayo ~ 1 T lemon Juice ~ 1 tsp. Worcestershire ~ 1 clove garlic, minced ~ 1/4 tsp. salt ~ 1/8 tsp pepper ~ 1/2 cup grated Parmesan ~ 1 T milk or half/half.

This is SO worth it. This is something you will dig into for snacking during the day... same as you would with homemade Potato Salad, etc. This combo - is a keeper.

I did forget to add one change I made. My area recently has recall on fresh onions. Instead of fresh onion - I purchased a bottle of Marzetta cocktail onions. This recipe is excellent.... especially with homemade Caesar dressing I used from this website.
