DROP DOUGHNUTS 
4 eggs
1 c. buttermilk
2 tsp. vanilla extract
1 tsp. grated lemon or orange peel
3 c. all purpose flour
1 1/2 tsp. baking powder
Cooking oil for deep frying
Honey and cinnamon

Beat eggs, stir in buttermilk, vanilla extract, and grated peel. Combine flour and baking powder. Stir into the egg mixture. Cover with a cloth. Let stand at room temperature for 1 hour. In a deep fryer, heat oil to 375 degrees. Drop batter by the tablespoon. Cook 4 minutes or until golden brown. Drain on paper towel. Drizzle with honey and sprinkle cinnamon. Serve hot.
