EGYPTIAN SPINACH 
1 pkg. frozen spinach, thawed & drained well
1 med. onion, chopped
Salt & pepper to taste
3 tbsp. olive oil
1 can (16 oz.) tomatoes

Saute onion in olive oil until soft and clear. Add spinach, cook and stir for 10 minutes. Add tomatoes, salt and pepper and simmer for 45 minutes. Serves 4 to 6.
