2 tbsp. minced shallots
2 tbsp. apple cider vinegar
2 tbsp. lemon juice
3/4 tsp. coarse cracked black pepper
1/2 tsp. sugar
1/2 tsp. salt
2/3 c. walnut oil
2/3 c. crumbled blue cheese

SALAD:

2 lg. bunches watercress
1 sm. head Romaine lettuce
1 head bib (butter) lettuce
1 lg. Golden Delicious apple (yellow) cored & thinly sliced
2/3 c. toasted walnut halves (under broiler for 1-2 min.)

Toss salad ingredients together except for the walnuts and apples. Sprinkle salad with toasted walnuts and decoratively place apples on top. Mix dressing ingredients together. Shake well. Pour over salad.
