POTATOES A'LA SAM 
6-7 lg. potatoes
1-1 1/2 lg. onions
8 eggs
Salt & pepper to taste

Dice potatoes and onions. Put potatoes in large skillet, fry until about half done, add onions and cook until done. (Stir often to keep onions from burning.) When onions are done break eggs over top and stir into potatoes. Serves 6-8. Garnish with red and green peppers or parsley.
