PINEAPPLE OATMEAL MUFFINS 
1 (8 oz.) can crushed pineapple, undrained
1 c. oatmeal
1/2 c. sour cream or buttermilk
1/3 c. shortening
1/3 c. brown sugar
1 tsp. grated orange peel
1 egg, beaten
1 1/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt

Combine undrained pineapple, oatmeal, and sour cream or buttermilk. Let stand 15 minutes. Cream shortening, sugar, and peel together. Stir in eggs. Sift flour with baking powder, soda, and salt. Add to creamed mixture alternately with oatmeal mixture. Bake at 400 degrees for 25 minutes. Makes about 1 dozen muffins.
