PINEAPPLE BRAN MUFFINS 
2 lg. eggs
1/2 c. brown sugar
1/2 c. oil
1/4 c. orange juice
1 (8 oz.) can crushed pineapple, undrained
1 c. All Bran cereal
1 tsp. grated orange peel
1 1/2 c. flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

In a large bowl or electric mixer, combine eggs, brown sugar, oil, orange juice, crushed pineapple, bran cereal, and orange peel. Beat at medium speed until mixed. Combine dry ingredients and stir just until moistened. Spoon into greased muffin tins 3/4 full. Bake at 300 degrees for 25 minutes. Makes 12 to 14 muffins.
