LOW-CAL, LOW-FAT OAT BRAN
MUFFINS
 
1 c. flour
1 c. oat bran
1/4 c. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon (optional)
5 tsp. cocoa (optional)
2 slightly beaten egg whites
1/2 c. crushed pineapple, unsweetened
1 tbsp. corn oil
1 1/4 c. skim milk
1/2 c. raisins

In bowl, combine flour, oat bran, sugar, baking powder, salt, cinnamon, and cocoa.

In another bowl, combine egg whites, crushed pineapple, corn oil and skim milk. Fold into dry ingredients. Do not beat or over stir. Add raisins.

Spray 12 muffin cups with non-stick vegetable spray and divide batter into 12 muffins. Bake in preheated 400 degree oven about 18 minutes. Makes 12 muffins.
