PORK CHOPS SCALLOPED POTATOES
CASSEROLE
 
4 pork chops (without bone)
2 tbsp. oil
1 lg. onion, sliced, separated into rings
3 tbsp. butter
3 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1 c. milk
1 c. chicken broth
4 med. potatoes, thinly sliced

Brown chops in oil, remove. Add onion rings to fat in skillet. Saute until tender. Melt butter in saucepan, stir in flour, salt, pepper. Cook 1 minute. Add milk, broth slowly. Cook until sauce thickens. Arrange potatoes in buttered baking dish. Top onion rings. Pour sauce over potatoes. Top with pork chops. Cover with foil. Bake at 350 degrees for 1 hour. Uncover last 10 minutes of baking.
