REFRIGERATOR ONION SALAD
(PICKLE)
 
1 1/2 lb. white onions, sliced
1/4 c. sugar
1/4 c. Wesson oil
1/2 c. vinegar
Salt & pepper to taste

Separate onions into rings and blanch in boiling water for 1 minute. Cool in ice water for 15 minutes, drain well and sprinkle with 1/4 cup sugar. Mix oil, vinegar and seasonings to taste and pour over onions. These will keep in the refrigerator a long time. You can add more sugar, if desired, and vary the seasonings with mustard seed, celery seed, pickling spices, etc.
