BANANA MUFFINS 
1 3/4 c. all-purpose flour
1/2 c. sugar
1/2 c. chopped walnuts
1 tsp. baking soda
1/2 tsp. salt
2 lg. ripe bananas
2 eggs
1/2 c. vegetable oil
1/3 c. buttermilk
1 tsp. vanilla extract

Preheat oven to 425 degrees. Grease 12 (2 3/4 inch) muffin pan cups or line with paper baking cups. Combine flour, sugar, walnuts, baking soda and salt.

In another bowl mash bananas with fork; stir in remaining ingredients. Add banana mixture to flour mixture and stir just until ingredients are moistened. Spoon batter into muffin cups. Bake 15-18 minutes or until tops are golden brown.
