ZUCCHINI ORANGE BREAD | |
1 c. raisins 2 tbsp. orange juice 4 eggs 1 1/3 c. oil Grated peel of 1 orange 2 2/3 c. flour 2 tsp. baking soda 1 tbsp. cinnamon 1 tsp. salt 1 c. walnuts, chopped 1 tbsp. flour 3 c. zucchini, shredded, well drained 2 tsp. vanilla 1/2 tsp. baking powder Soak the raisins in two tablespoons orange juice for one hour before mixing batter. Sift flour, baking powder, baking soda, cinnamon and salt together and set aside. Drain raisins, reserve liquid and set aside. In a large bowl beat eggs lightly and then mix in oil, sugar, vanilla, orange peel, and orange juice (drained from raisins) and drained zucchini. Stir in flour mixture into egg mixture, then flour (coat lightly) and stir into batter. Pour batter into greased and floured loaf pans. Cool in pan 10 minutes. Bake at 375 degrees for one hour. Great, great cake, to be served with a meal, it is so easy as it doesn't have yeast to contend with. Also it is nice for an afternoon tea. |
