STUFFED MANICOTTA 
1 1/2 c. Mozzarella cheese, shredded
1 c. cottage or ricotta cheese
1/2 c. Parmesan cheese
2 eggs, beaten
1/4 c. snipped parsley
1 tsp. onion, minced
1 (15 oz.) can of spaghetti sauce
1/3 c. water
1/2 lb. cooked Italian sausage, drained
10 oz. Manicotta

Cook manicotta and drain. Meanwhile, combine 3/4 cups Mozzarella, cottage cheese, and Parmesan cheese. Stir in egg, onion, and parsley. Combine tomato sauce and water. Pour 2/3 of the sauce in an oblong pan. Split the manicotta shells and stuff with cheese mixture. Place in pan and pour remaining sauce and rest of cheese on top. Bake at 350 degrees for 35 minutes.
