ZUCCHINI PANCAKES 
3 c. finely chopped or coarsely grated zucchini, squeeze out water
1 egg
1 sm. onion, grated
Salt and pepper to taste
1/2 c. flour
1 tsp. baking powder

Combine zucchini, onion, egg, salt and pepper. Sift flour and baking powder over zucchini mixture and blend ingredients thoroughly. Drop the mixture by 1/4 cups on a greased griddle. Cook until golden brown on both sides. Serve with melted butter and Parmesan cheese may be used.
