ZUCCHINI ROUNDS (Pancakes) 
1/3 c. biscuit mix
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
2 eggs (beaten slightly)
2 c. shredded zucchini (2 med.)
2 tbsp. butter

Stir together biscuit mix, cheese and pepper. Stir in beaten eggs just until mixture is moistened. Fold in zucchini. In skillet melt butter over medium heat. Use about 2 tablespoons of mixture per round, cooking in butter 2-3 minutes on each side or until brown. Serve warm. Makes about 12 rounds.
