ZUCCHINI PANCAKES 
1/3 c. Bisquick
1/4 c. Parmesan cheese
1/8 tsp. black pepper
2 eggs, slightly beaten
2 c. shredded unpared zucchini

Stir together Bisquick, cheese and pepper. Mix in beaten egg until just moistened. Fold in zucchini. Cook in 2 tablespoon rounds, using butter. Use "batter" immediately, as zucchini starts to "weep" and makes the batter runny. Serves 4.
