RED VELVET CAKE 
1 1/2 c. oil
1 1/2 c. sugar
2 eggs
1 c. buttermilk
1 tsp. salt
1 tsp. cocoa
1 tsp. vanilla
2 oz. red food coloring
1 tsp. baking soda
1 tsp. vinegar
2 1/2 c. plain flour

Beat oil and sugar together. Add eggs, one at a time. Mix cocoa, vanilla, vinegar and food coloring in a small bowl. Add to oil mixture. Mix in flour, soda and buttermilk. Add salt and milk; mix well. Bake at 350 degrees for 35-40 minutes in layer pans. Cool and frost.

FROSTING:

1 stick butter, room temperature
1 box powdered sugar
8 oz. cream cheese, room temperature
1 tsp. vanilla
1 c. chopped nuts

Mix all ingredients together. Frost sides, between layers and top of cake.
