CRAB IMPERIAL | |
3 tbsp. butter 1 tsp. chopped onion 3 tbsp. flour 2 c. milk Dash of red pepper 1/2 tsp. celery salt or seed 1 tsp. Worcestershire sauce 1 egg yolk, beaten 1/2 c. bread crumbs 1 tbsp. parsley 2 cans crab meat, drained and checked for cartilage Melt butter, add onion and cook over low heat until onion is lightly brown. Add flour, blend together. Add milk and seasonings and cook until thick, stirring occasionally. Add egg yolk, stir and remove from pan from heat. Add MOST of the bread crumbs. Add crab and parsley. Mix well and fill casserole dish. Top with remaining bread crumbs. Bake 20-30 minutes in preheated 400 degree oven. |
