POTATOES WITH CHEESE SAUCE 
3 to 4 c. potatoes, sliced and boiled until tender

SAUCE:

1/2 stick butter
1/2 c. self-rising flour
1 1/2 to 2 c. grated cheese
2 c. milk
1 chopped onion (optional)
1/2 c. chopped pimento (optional)
Salt and pepper to taste

Drain potatoes and place in casserole dish. Melt butter in saucepan. Add flour and gradually add milk. Stir in cheese (reserve some for top, if desired). Add remaining ingredients. Cook over low heat until thickened. Pour sauce over potatoes. Bake at 375 degrees for approximately 20 minutes until light brown.
