SPEEDY SALMON PATTIES 
1 (15 1/2 oz.) can salmon
2 eggs
1/3 c. finely chopped onions
1/2 c. instant mashed potato flakes
1 1/2 tsp. baking powder
All vegetable shortening for frying

Drain salmon and combine with remaining ingredients. Heat shortening (about 1/4 inch deep) in skillet. Shape salmon into 8 patties and fry in hot shortening, turning once.
