SOUTHERN FRIED SHRIMP 
3 c. deveined shrimp
2 1/4 tsp. salt
1/4 tsp. pepper
1 egg, well beaten
1/2 c. light cream or milk
1/2 c. yellow cornmeal
1/2 c. flour
1/2 tsp. baking powder

Season shrimp with 2 tsp. salt and pepper; let stand at room temperature for 15 minutes.

Combine egg, cream, cornmeal, flour, baking powder and remaining salt in small mixing bowl; mix until well blended and smooth. Add batter mixture to shrimp; stir until shrimp are well coated. Drop shrimp in hot fat in clusters of 2 or 3 shrimp. Cover; fry until light brown. Yield: 6-8 servings.
