COCONUT-APRICOT BARS 
1 pkg. lemon cake mix
1/4 c. water
2 eggs
1/4 c. soft butter
1/4 c. brown sugar, packed
1 c. flaked coconut
1 c. chopped dried apricots
Lemon glaze

Heat oven to 375 degrees. Combine half the cake mix (dry mix), water, eggs, butter and brown sugar in mixing bowl; mix thoroughly. Blend in remaining cake mix. Stir in coconut and apricots. Spread in greased and floured jelly roll pan, 15 1/2" x 10 1/2" x 1". Bake 20 to 25 minutes. While warm, spread with lemon glaze, cut into bars, 3" x 1 1/2". Makes about 30.

LEMON GLAZE: Beat 1 cup confectioners' sugar, 1/2 teaspoon grated lemon peel, 1 teaspoon lemon juice and 2 tablespoons milk until smooth.
