LEMON COCONUT BARS 
1 1/2 c. flour
1/2 c. powdered sugar
3/4 c. cold butter
4 eggs, slightly beaten
1 1/2 c. granulated sugar
1 tsp. baking powder
1/2 c. lemon juice
3/4 c. flaked coconut

In medium bowl, combine flour and powdered sugar; cut in butter until crumbly. Press onto bottom of lightly greased 13 x 9 inch baking pan; bake at 350 degrees for 15 minutes.

In large bowl, mix eggs, granulated sugar, baking powder and lemon juice. Pour over crust; top with coconut. Bake 20 minutes or until golden. Cool. Cut into bars. Store in refrigerator.
