HAWAIIAN DROP COOKIES 
2 c. flour
2 tsp. baking powder
2 tsp. salt
2 1/2 to 3 c. shortening
1 1/4 c. sugar
1 egg
1/2 tsp. vanilla extract
1/2 tsp. almond extract
3/4 c. crushed pineapple, well drained
1/2 c. coconut

Mix flour, baking powder, and salt. Set aside. Cream shortening, sugar, egg, vanilla, and almond. Blend in pineapple and coconut. Add flour mixture. Drop by teaspoon on ungreased cookie sheet 3 inches apart. Sprinkle with coconut. Bake at 325 degrees for 20 minutes.
