DOUGHNUTS 
1 c. sugar
2 tbsp. melted shortening
2 eggs
4 c. sifted flour
4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. milk

Beat eggs until light. Add sugar gradually, beating well. Blend in shortening. Sift dry ingredients together and add alternately with milk to sugar mixture. Roll 1/4" thick on floured board. Cut with doughnut cutter and fry a few at a time in hot deep fat, 360 degrees, turning once. Drain on absorbent paper and add topping or frosting, if desired. Makes about 24 doughnuts.

TOPPING: Cinnamon sugar

Roll hot doughnuts in topping or toppings.

CREAMY COCOA FROSTING:

1/4 c. butter
1 tsp. vanilla
3 tbsp. cocoa
3 c. confectioners' sugar, sifted
1/4 c. strong coffee (about)

Blend butter and vanilla. Sift cocoa and confectioners' sugar together and add to mixture alternately with coffee. Use enough coffee to make icing soft enough to spread.
