RICE DELIGHT 
3/4 c. rice
1 (8 oz.) can crushed pineapple
1 c. marshmallows, cut up or use miniature
1/4 c. sugar
2 1/2 tbsp. real lemon juice
3/4 to 1 c. Cool Whip

Cook rice in 2 cups water until tender. Rinse in cold water. Set in refrigerator to get very cold. Add crushed pineapple, marshmallows, sugar, lemon and Cool Whip. Mix. Serve cold. Serves 6.
