RHUBARB UPSIDE DOWN CAKE 
4 c. rhubarb cut up
1 c. sugar
1 1/2 c. miniature marshmallows
1 pkg. (3 oz.) strawberry Jello
1 1/2 c. sugar
3/4 c. shortening
2 1/2 c. flour
4 1/2 tsp. baking powder
3 eggs
3/4 c. milk
1 1/2 tsp. vanilla

Mix first four ingredients and put in a greased 9 x 13 pan. Mix 1 1/2 cups sugar with shortening until smooth add flour, baking powder, eggs, milk and vanilla when well mixed pour over rhubarb mixture in pan. Bake at 350 degrees for 40 to 55 minutes depends on oven temperature accuracy.
