PUMPKIN CREAM PIE 
1 pkg. (6 serving size) Jello vanilla pudding
3 tbsp. sugar
1 tsp. pumpkin pie spice
1 can (13 oz.) evaporated milk
1 egg, beaten
1 c. canned pumpkin
1 baked 9 inch pie shell

Combine pie filling, pudding mix, sugar, spice, milk, egg, pumpkin in saucepan. Cook over medium heat until mixture comes to a full bubbling boil. Cook 5 minutes, stirring twice. Pour into baked shell and chill 4 hours. Garnish with Cool Whip and chopped nuts if desired.

This is the only pumpkin pie my husband will eat. It has been a tradition in our family for over 30 years. I also use a Graham cracker crust. You can also garnish with whipped cream, candied walnuts or pecans, chocolate, etc... Make it your own.
