FRENCH-FRIED EGGPLANT 
1 med. eggplant, peeled
1 tbsp. salt
1 egg, beaten
Cornmeal
Cooking oil

Cut eggplant into 1/2 inch strips; cover with water, add salt. Soak for 30 minutes, drain. Dip in eggs; roll in cornmeal. Brown in cooking oil; drain.
