FRENCH-FRIED EGGPLANT 
1 med. size eggplant
Flour
Milk
Seasoned bread crumbs
Seasoned salt
Grated Romano cheese
2 beaten eggs

Pee land cut eggplant into French fry size. Dip in beaten eggs and milk. Roll eggplant in bread crumbs and a bit of flour. Fry in foil for 5 minutes. Drain on paper towels. Dust with seasoned salt and cheese. Serve hot.
