FRENCH FRIED POTATOES 
6 med. potatoes, peeled
Cold water
Fat for frying
Salt & pepper

Cut potatoes lengthwise, then crosswise into 3/8" strips. Rinse in cold water; dry thoroughly between towels. Fry small amounts in deep hot fat, 360 degrees about 5 minutes until tender, but not brown. Drain on paper toweling. Repeat with remaining batches. Makes 6 servings. Cool to room temperature. Package, seal, label, date and freeze. Recommended storage time: 1 month.

To Serve: Arrange potatoes on baking sheet; put in hot oven at 425 degrees for 10 minutes or until brown, turning once.

Quickly season with salt and pepper to taste. Serve at once.
