MICROWAVE STRAWBERRY SHORTCUT
CAKE
 
1 c. miniature marshmallows
1 (3 oz.) pkg. strawberry Jello
2 1/4 c. flour
1/2 c. shortening
1/2 tsp. salt
1 tsp. vanilla
2 c. frozen strawberries, thawed in own syrup
1 1/2 c. sugar
3 tsp. baking powder
1/2 c. milk
3 eggs

Sprinkle marshmallows in bottom of 13 x 9 x 2 inch Pyrex dish. Combine strawberries and Jello and set aside. In large mixing bowl blend together remaining ingredients; pour batter over marshmallows and spoon mixture over batter. Microwave 12 to 15 minutes turning every 2 1/2 to 3 minutes. Serve like this or top with whipped cream or Cool Whip.

Since microwave ovens vary in power, you may need to adjust your cooking time.
