MINCEMEAT CHEESE PIE 
4 (3 oz.) pkg. cream cheese, softened
1/2 c. sugar
2 eggs, beaten
1 tbsp. grated lemon rinds
1 tbsp. lemon juice
1/2 tsp. vanilla
1 1/2 c. prepared mincemeat
1 unbaked 9" pastry shell

Beat cream cheese at medium speed until smooth. Add eggs, sugar, lemon rinds, lemon juices and vanilla; beating well. Spread mincemeat in pastry shell. Spoon cream cheese mixture evenly over mincemeat. Bake at 375 degrees for 35 minutes or until cream cheese layer is firm when lightly touched in center. Cook to room temperature, then chill until serving time.
