BUTTERMILK PANCAKES 
1 1/4 c. flour
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2 tbsp. sugar
1 whole egg
1 1/4 c. buttermilk
3 tbsp. cooking oil or melted shortening

Sift together flour, baking powder, soda, salt and sugar in one bowl. In another bowl, beat egg and add buttermilk and shortening. Add liquid ingredients to dry and stir until just blended. Batter will be a little bit lumpy. Heat skillet or griddle. Pour batter. Bake on one side until cake is full of bubbles that have not popped. Turn and bake on other side. Serve hot. If batter gets too thick, add a little water.
