GARLIC CHICKEN 
1 frying chicken, cut in pieces
40 cloves of garlic (separated, but not peeled)
1/4 c. olive oil
1/2 c. dry white wine
1/4 c. dry vermouth
4 stalks of celery (cut in 1" pieces)
1 lg. onion, coarsely chopped
1 tsp. oregano
2 tsp. dry basil
2 tsp. dried parsley
Pinch crushed red pepper
1 lemon
Salt & pepper to taste
Dash of nutmeg

Place chicken pieces in shallow baking pan. Sprinkle all ingredients evenly over chicken. Squeeze lemon over top, cut remaining lemon rind and place around chicken.

Cover with foil and bake at 375 degrees for 40 minutes. Remove foil and bake additional 20 minutes.

Serve the chicken and squeeze the papery coat off garlic and eat garlic on crusty bread.
