WONDERFUL CHEESY FISH 
5 tbsp. butter
8 sole or other fillets (about 2 lbs.)
2 tsp. salt
1/2 tsp. seasoning salt
1 1/4 c. milk
3 tbsp. flour
2 c. grated cheddar cheese
Paprika

Preheat oven to 350 degrees. In saucepan, melt 2 tablespoons butter; brush over fillets. Sprinkle with seasoning salt. Roll each fillet and lace, seam side down, in 9 x 9 baking dish. Pour 1/2 cup milk over filets; bake for 25 minutes or until fish flakes easily when tested with fork. Meanwhile, in 2 quart saucepan over medium heat, melt remaining butter. Stir in flour. Gradually add remaining milk; cook, stirring until thickened. Reduce heat; stir in cheese. Spoon liquid from fish; stir 1/3 cup into sauce. Pour sauce over fish; sprinkle with paprika. Broil about 1 minute, just until sauce is golden. Even the pickiest fish eaters will love this recipe!
