RICE SALAD 
2 c. cooked rice
Cherry tomatoes
Red and green bell pepper
1 onion, diced
3/4 c. fresh mushrooms, sliced

DRESSING:

3/4 c. olive oil
1/4 c. red wine vinegar
1/4 c. minced onions
1/2 tsp. celery salt
1/4 tsp. fennel seed
1 tsp. salt
Ground pepper

Mix all ingredients and chill. Best if made several hours before serving.
